Method
- Whisk pineapple juice, brown sugar, and soy sauce until sugar dissolves.
- Marinate chicken in mixture for at least 30 minutes (no more than 2 hours).
- Lightly spray crockpot and add chicken with marinade.
- Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
- Remove chicken, rest 5 minutes, and serve whole or shredded with sauce spooned on top.
Notes
For healthier options, reduce sugar with applesauce, use low-sodium soy sauce, or add vegetables like peppers and onions. Avoid marinating chicken too long in pineapple juice to prevent mushy texture.
