Ingredients

  • 2 lb 0.9 kg chicken tenderloin chunks
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
Smart Substitutions:
  • Use chicken thighs breasts, or drumsticks
  • Substitute pineapple juice with fresh or canned pineapple juice
  • Swap brown sugar with coconut sugar honey, or maple syrup
  • Use tamari or coconut aminos instead of soy sauce

Method

  1. Whisk pineapple juice, brown sugar, and soy sauce until sugar dissolves.
  2. Marinate chicken in mixture for at least 30 minutes (no more than 2 hours).
  3. Lightly spray crockpot and add chicken with marinade.
  4. Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  5. Remove chicken, rest 5 minutes, and serve whole or shredded with sauce spooned on top.

Notes

For healthier options, reduce sugar with applesauce, use low-sodium soy sauce, or add vegetables like peppers and onions. Avoid marinating chicken too long in pineapple juice to prevent mushy texture.
