Strawberry Shortcake Cheesecake Bars

Ingredients
  

Shortcake Crust
  • 125 g all-purpose flour
  • 50 g granulated sugar
  • 113 g unsalted butter softened
  • 0.25 tsp salt
Cheesecake Filling
  • 450 g cream cheese softened
  • 120 g sour cream
  • 100 g granulated sugar
  • 2 large eggs
  • 5 ml vanilla extract
Strawberry Topping
  • 300 g fresh strawberries sliced
  • 50 g granulated sugar for macerating
  • 15 ml lemon juice

  • 9x13-inch baking pan

Method
 

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, butter, and salt. Mix until crumbly.
  2. Press the mixture into the bottom of a greased 9x13 inch baking pan. Bake for 10-12 minutes or until lightly golden.
  3. In a large bowl, beat the cream cheese until smooth. Add sour cream, sugar, eggs, and vanilla. Mix until well combined.
  4. Pour the cheesecake filling over the baked crust and spread evenly. Bake for 30-35 minutes or until the center is set. Remove from the oven and let cool.
  5. In a bowl, combine sliced strawberries, sugar, and lemon juice. Let sit for 10-15 minutes to macerate.
  6. Once the cheesecake is cool, top with the macerated strawberries.
  7. Refrigerate for at least 2 hours before slicing into bars. Serve chilled.

Notes

For best results, allow the cheesecake bars to chill overnight before serving. You can also use other berries if strawberries aren't available.
