Ingredients
  

  • 30 g chocolate protein powder plant-based or whey
  • 30 g unsweetened cocoa powder
  • 30 g almond flour or oat flour as an alternative
  • 30 ml plain Greek yogurt non-fat or regular
  • 15 ml maple syrup or honey
  • 30 ml almond milk
  • 1 egg
  • 0.5 tsp baking powder
  • 1 pinch salt
  • 15 g mini chocolate chips optional but delicious

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tray or line with liners.
  2. In a mixing bowl, whisk together the egg, yogurt, almond milk, and maple syrup until smooth and creamy.
  3. Sprinkle in the protein powder, cocoa powder, almond flour, baking powder, and salt. Stir until everything comes together into a thick brownie batter.
  4. If desired, fold in the mini chocolate chips for extra chocolate goodness.
  5. Spoon the batter evenly into 8-10 mini muffin wells.
  6. Bake for 10-12 minutes. A toothpick inserted should come out with a few moist crumbs.
  7. Let them rest in the pan for 5 minutes before transferring to a cooling rack.
