- Heat olive oil in a skillet over medium-high heat. Cook Italian sausage for 6–8 minutes, breaking it into crumbles until browned. Transfer to a plate.
- Reduce heat to medium. Add garlic to the skillet and sauté for 1 minute. Add heavy cream and bring to a simmer.
- Stir in Parmesan until melted and smooth. Season with salt, pepper, and optional red pepper flakes.
- Cook tortellini in boiling salted water according to package directions. Add broccoli during the last 2–3 minutes.
- Drain tortellini and broccoli, then add to the skillet along with cooked sausage. Toss to coat in the sauce.
- Serve immediately with extra Parmesan if desired.
Notes
Avoid overcooking garlic to prevent bitterness. Add Parmesan gradually to keep the sauce smooth.
