Ingredients

  • 1 20-ounce package cheese tortellini
  • 1 lb Italian sausage mild or spicy
  • 3 cups broccoli florets
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes optional
  • Optional substitutions: half-and-half turkey sausage, gluten-free tortellini

Method

  1. Heat olive oil in a skillet over medium-high heat. Cook Italian sausage for 6–8 minutes, breaking it into crumbles until browned. Transfer to a plate.
  2. Reduce heat to medium. Add garlic to the skillet and sauté for 1 minute. Add heavy cream and bring to a simmer.
  3. Stir in Parmesan until melted and smooth. Season with salt, pepper, and optional red pepper flakes.
  4. Cook tortellini in boiling salted water according to package directions. Add broccoli during the last 2–3 minutes.
  5. Drain tortellini and broccoli, then add to the skillet along with cooked sausage. Toss to coat in the sauce.
  6. Serve immediately with extra Parmesan if desired.

Notes

Avoid overcooking garlic to prevent bitterness. Add Parmesan gradually to keep the sauce smooth.
