Method
- Puree strawberries until smooth and set aside.
- Whisk flour, baking powder, and salt in a medium bowl.
- Cream butter and sugar until light and fluffy.
- Add egg, vanilla, and strawberry puree; mix until combined.
- Gradually fold in dry ingredients to form a soft dough.
- Chill dough for 30 minutes.
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Roll dough into 1-inch balls and coat in granulated sugar.
- Place balls 2 inches apart on baking sheets.
- Bake 10–12 minutes until edges are set and fine cracks appear.
- Cool 5 minutes on the sheet, then transfer to a wire rack.
Notes
Chill dough thoroughly to prevent excess spreading. Use fresh or frozen strawberries for authentic flavor and natural color.
