Method
- Combine oats, almond butter, honey, protein powder, and peppermint extract in a mixing bowl.
- Add almond milk 1 tbsp at a time until mixture holds together.
- Fold in mini chocolate chips.
- Roll mixture into 12–15 balls using a small scoop or your hands.
- Place on parchment-lined sheet and refrigerate 20 minutes before serving.
Notes
Add liquids gradually to avoid overly sticky texture. Start with less peppermint extract and increase to taste.
