Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1 scoop vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/2 cup mini dark chocolate chips
  • Unsweetened almond milk as needed

Method
 

  1. Combine oats, almond butter, honey, protein powder, and peppermint extract in a mixing bowl.
  2. Add almond milk 1 tbsp at a time until mixture holds together.
  3. Fold in mini chocolate chips.
  4. Roll mixture into 12–15 balls using a small scoop or your hands.
  5. Place on parchment-lined sheet and refrigerate 20 minutes before serving.

Notes

Add liquids gradually to avoid overly sticky texture. Start with less peppermint extract and increase to taste.
