Method
- Bring 1 inch of water to a boil in a large pot fitted with a steamer basket.
- Add lobster to steamer, cover, and steam for 12–14 minutes until bright red.
- Melt butter in a small saucepan with tarragon, lemon juice, and salt over low heat.
- Melt a small amount of butter in a skillet and toast buns until golden.
- Remove lobster meat from tail and claws using kitchen shears.
- Split tail meat lengthwise and toss all lobster meat in lemon butter.
- Divide lobster evenly between toasted buns.
- Drizzle with extra lemon butter and serve immediately.
Notes
Do not oversteam the lobster, as this can make the meat tough. Serve immediately for best flavor and texture.
