Ingredients
  

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon olive oil
  • 1 cup warm water
  • 1 teaspoon sesame seeds optional

Method
 

  1. In a large bowl, mix flour, salt, and sugar.
  2. Add olive oil and warm water and mix until a dough forms.
  3. Knead dough on a floured surface for 8–10 minutes until smooth.
  4. Cover dough and let rest for 30–45 minutes.
  5. Divide dough into 8–10 equal portions.
  6. Roll each portion into a thin circle or oval.
  7. Heat a dry skillet over medium heat.
  8. Cook each flatbread for 1–2 minutes per side until lightly golden.
  9. Sprinkle with sesame seeds if using and stack under a towel to keep warm.

Notes

Resting the dough makes rolling easier and improves texture. Store cooked lavash covered to keep soft.
