Ingredients
  

  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 3 oz package flavored gelatin powder
  • 2 –3 tablespoons milk optional
  • 1/2 cup granulated sugar for rolling

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream softened butter and 3/4 cup sugar until light and fluffy.
  3. Add egg and vanilla; beat until fully combined.
  4. Add gelatin powder and mix until evenly incorporated.
  5. Whisk flour, baking powder, and salt; add gradually to wet ingredients.
  6. Add milk as needed until dough is soft and pliable.
  7. Chill dough for at least 1 hour.
  8. Roll dough into 1-inch balls and coat in sugar.
  9. Bake 8–10 minutes until edges are set but centers look soft.
  10. Cool 5 minutes on sheet, then transfer to wire rack to finish cooling.

Notes

Avoid overbaking for soft, chewy cookies. Always chill the dough to prevent spreading and ensure vibrant flavor.
