Ingredients
  

  • 1 ½ cups warm water 110°F / 45°C
  • 2 ¼ tsp active dry yeast
  • 1 tbsp sugar or honey
  • 1 ½ cups rye flour
  • 2 cups bread flour plus extra for dusting
  • 1 ½ tsp salt
  • 2 tbsp olive oil or melted butter
  • 1 tbsp caraway seeds optional

Method
 

  1. Mix warm water, yeast, and sugar in a bowl and let stand 10 minutes until foamy.
  2. Add rye flour, bread flour, salt, and oil and mix until a sticky dough forms.
  3. Knead gently for 8–10 minutes until smooth but slightly tacky.
  4. Place dough in a greased bowl, cover, and let rise 1 hour or until doubled.
  5. Shape dough into a loaf and place in a greased loaf pan.
  6. Cover and let rise for 30 minutes.
  7. Preheat oven to 375°F (190°C), slash dough, and mist lightly with water.
  8. Bake for 30–35 minutes until golden and internal temperature reaches 190°F.
  9. Cool completely on a wire rack before slicing.

Notes

Rye dough should be handled gently to avoid breaking down its structure. Always allow the bread to cool fully before slicing to prevent a gummy texture.
