Ingredients
  

  • 1 lb ground turkey 93/7 blend
  • 1 small onion diced
  • 2 garlic cloves minced
  • 3 bell peppers red, yellow, green, sliced
  • 1 tablespoon olive oil
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon tomato paste
  • 1/2 teaspoon paprika
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until translucent.
  3. Add minced garlic and sauté briefly until fragrant.
  4. Add ground turkey and cook, breaking it up, until almost cooked through.
  5. Add sliced bell peppers and cook until tender-crisp.
  6. Stir in tomato paste, soy sauce, paprika, salt, and black pepper.
  7. Simmer briefly until flavors are well combined.
  8. Remove from heat, garnish with fresh parsley, and serve hot.

Notes

Avoid overcooking the turkey to keep it juicy, and keep peppers slightly crisp for the best texture.
