Ingredients
  

  • 1 lb lean ground beef 85%
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook ground beef and onion in a skillet for 5-7 minutes; drain excess fat.
  3. Add garlic, cumin, and chili powder; cook 1 minute more.
  4. Spoon 2-3 tablespoons of beef mixture into each tortilla and roll tightly.
  5. Place seam-side down in the baking dish.
  6. Pour enchilada sauce over the top and sprinkle with cheese.
  7. Bake 20-25 minutes until bubbly and golden.
  8. Rest 5 minutes before serving.

Notes

Warm tortillas before rolling to prevent cracking; drain beef fully to avoid greasy enchiladas.
