Method
- Place freeze-dried strawberries in a food processor and pulse until finely crushed.
- Add the Golden Oreos and pulse until fine crumbs form.
- Mix in the cotton candy sugar and pulse briefly to combine.
- Set aside about 2 cups of the crumb mixture for coating.
- In a mixing bowl beat softened cream cheese and powdered sugar until smooth.
- Add vanilla extract and mix until combined.
- Fold in 1/2 cup of the strawberry cookie crumb mixture.
- Gently fold in the whipped cream or Cool Whip until light and fluffy.
- Refrigerate the filling for 15–20 minutes to firm up.
- Scoop about 1 tablespoon of filling and roll into balls.
- Roll each ball in the reserved strawberry cookie crumb mixture.
- Coat with pink sprinkles or extra cotton candy sugar if desired.
- Refrigerate for at least 1 hour before serving.
Notes
Chill the filling before rolling to make shaping easier. For extra color, add a drop of pink gel food coloring to the cookie crumb mixture.
