Method
- Preheat oven to 350°F and line baking sheets with parchment paper.
- In a bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, beat butter and brown sugar until light and fluffy.
- Add egg, vanilla extract, and maple extract if using, and beat well.
- Mix in milk until combined.
- Add dry ingredients and mix until just combined.
- Fold in oats and white chocolate chips.
- Scoop dough into 1½ tablespoon balls.
- Optional: roll in cinnamon sugar.
- Bake for 10–12 minutes until edges are golden and centers are soft.
- Cool on baking sheet for 5 minutes, then transfer to a rack.
Notes
Do not overbake to keep cookies chewy. Use old-fashioned oats for best texture. Cream butter and sugar well for soft centers. Chill dough if cookies spread too much.
