Method
- Rinse mint leaves, remove stems, and pat dry.
- Blend mint with a small amount of water into a smooth purée.
- Combine sugar and remaining water in a saucepan.
- Heat gently until sugar dissolves, then bring to a boil.
- Cook for 2 minutes without stirring.
- Remove from heat and stir in mint purée.
- Optionally strain mixture for a clear finish.
- Pour into silicone molds quickly.
- Let cool at room temperature briefly.
- Refrigerate for 2 hours until firm.
- Remove from molds and serve.
Notes
Use fresh mint for best flavor. Do not overcook syrup. Store in airtight container in a dry place to prevent stickiness.
