  • 2 tbsp zucchini Squeeze out excess water from shredded zucchini to prevent a watery mixture.
  • 2 tbsp mozzarella cheese Shredded mozzarella helps bind the bites and adds flavor.
  • 1 tsp green pesto Adds a savory, herbaceous depth to the bites.
  • 0.5 tsp Salt Adjust seasoning to your preference.
  • 0.25 tsp Pepper Freshly ground black pepper enhances the flavor.

Method
 

  1. In a bowl, combine ground turkey, minced garlic, chopped basil, shredded zucchini, shredded mozzarella cheese, and green pesto. Season with salt and pepper to taste. Mix well until all ingredients are evenly incorporated.
  2. Form the mixture into small, bite-sized patties or meatballs (approximately 1.5 inches in diameter).
  3. Heat a lightly oiled skillet over medium heat. Cook the turkey bites for 3-5 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F / 74°C). Alternatively, bake on a lined baking sheet at 375°F (190°C) for 15-20 minutes.
  4. Serve immediately, perhaps with a side of steamed greens or a light salad for a complete low carb meal.
