Ingredients

  • 12 cups cubed bread French, Italian, or sourdough, day-old preferred
  • 1 stick 8 tbsp butter, divided
  • 1 large yellow onion diced
  • 3 ribs celery diced
  • 1 lb ground breakfast sausage
  • 3 cloves garlic minced
  • 2 large eggs whisked
  • 3 cups chicken broth room temperature
  • 2 tsp each: dried parsley rosemary, thyme
  • 1/4 tsp each: ground sage black pepper
  • Fresh parsley for garnish

Method

  1. Preheat oven to 350°F. Cut bread into 1-inch cubes and toast on a baking sheet for 20 minutes until golden and firm.
  2. In a skillet, melt 2 tbsp butter. Add sausage, onion, and celery. Cook 10 minutes until sausage is browned and vegetables tender.
  3. Transfer mixture to bread cubes. In the same skillet, melt remaining 6 tbsp butter. Add garlic and seasonings. Cook 2 minutes until aromatic.
  4. Pour herb butter over bread and sausage mixture. Toss to coat evenly and transfer to a greased 9×13-inch casserole dish.
  5. Whisk eggs with chicken broth. Gradually pour over stuffing, tossing gently until bread is moist but not soggy.
  6. Cover and bake 20 minutes. Uncover and bake an additional 35 minutes until golden and set. Rest 10 minutes before serving.

Notes

Best made with day-old bread to prevent soggy texture. Assemble up to 24 hours ahead for easy holiday prep.
