Ingredients
  

For the Noodles
  • 8 oz egg noodles lo mein, udon, or spaghetti
  • 4 tbsp unsalted butter
  • 6 cloves garlic finely minced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce optional
  • 1 tsp sugar
  • 1 tbsp vegetable or neutral oil
  • Black pepper to taste
  • Optional: chili flakes or sriracha
For the Surf and Turf
  • 8 oz sirloin or flank steak bite-sized pieces
  • 10 –12 large shrimp peeled and deveined
  • 2 green onions chopped (garnish)

Method
 

  1. Cook noodles according to package directions. Drain and set aside, reserving ¼ cup cooking water.
  2. Season steak with salt and pepper. Heat oil in a large skillet or wok over medium-high heat.
  3. Sear steak for 2–3 minutes per side until browned. Remove and set aside.
  4. In the same pan, cook shrimp for 1–2 minutes per side until pink and opaque. Remove and set aside.
  5. Reduce heat to medium and add butter. Once melted, add garlic and sauté until fragrant.
  6. Stir in soy sauce, oyster sauce, fish sauce (if using), and sugar.
  7. Add noodles and toss to coat evenly. Use reserved noodle water if needed.
  8. Return steak and shrimp to the pan and toss gently to combine.
  9. Heat through for 1–2 minutes, garnish with green onions, and serve immediately.

Notes

Avoid burning the garlic by keeping heat at medium. Cook steak and shrimp separately to prevent overcooking and ensure proper searing.
