Method
- Preheat oven to 375°F.
- In a large bowl, toss bananas with sugars, melted butter, water, lemon juice, vanilla, cinnamon, nutmeg, and salt.
- Let mixture sit for 15–20 minutes.
- In another bowl, whisk flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk buttermilk, melted butter, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Pour banana mixture into a 9x13 baking dish.
- Dollop batter over banana mixture without stirring.
- Sprinkle turbinado sugar over top.
- Bake for 35–45 minutes until golden and bubbling.
- Cool for 15–20 minutes before serving.
Notes
Use very ripe bananas for best flavor. Do not stir topping into filling. Turbinado sugar gives the signature crackly finish.
