Quick Peach Cobbler Egg Rolls Recipe

Ingredients

  • 3 cups diced peaches fresh or canned, drained
  • ¼ cup granulated sugar
  • ¼ cup packed brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 10 –12 egg roll wrappers
  • Water for sealing
  • Vegetable oil for frying
  • ½ cup sugar for coating
  • 1 tbsp cinnamon for coating
  • Vanilla ice cream for serving

Method

  1. In a saucepan over medium heat, combine peaches, granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice.
  2. Cook for 5–7 minutes until thickened and jammy.
  3. Stir in vanilla extract and let cool slightly.
  4. Place an egg roll wrapper in a diamond shape and add 2 tablespoons of filling in the center.
  5. Fold bottom corner up, fold in sides, and roll tightly.
  6. Seal the edge with water.
  7. Heat about 2 inches of oil to 350°F.
  8. Fry egg rolls for 2–3 minutes per side until golden brown.
  9. Remove and drain on paper towels.
  10. Mix sugar and cinnamon, then roll hot egg rolls in the mixture.
  11. Serve immediately with vanilla ice cream.

Notes

Do not overfill the egg rolls to prevent bursting. Make sure filling is not too hot or cold when rolling. Maintain proper oil temperature for crispiness. Air fry at 375°F for 8–10 minutes if preferred.
