Ingredients
  

  • 24 mini phyllo pastry cups frozen, thawed
  • 1 pound ground beef 80/20 blend
  • 1 packet taco seasoning 1 oz
  • 1/4 cup water
  • 1/2 cup sour cream
  • 1/4 cup ranch dressing
  • 1/4 cup mayonnaise
  • 1 cup Mexican cheese blend shredded
  • 2 medium Roma tomatoes finely diced and drained
  • 1/4 cup green onions thinly sliced
  • 2 tablespoons fresh cilantro chopped
  • Optional garnishes: sliced jalapeños black olives, avocado cubes

Method
 

  1. Preheat oven to 350°F. Arrange thawed phyllo cups on a baking sheet and pat dry.
  2. In a skillet, brown ground beef for 4–5 minutes until cooked through. Drain excess fat.
  3. Add taco seasoning and 1/4 cup water. Simmer 2–3 minutes until glossy and flavorful.
  4. In a bowl, mix sour cream, ranch dressing, and mayonnaise until smooth.
  5. Spoon 1 teaspoon meat mixture into each phyllo cup. Top with 1/2 teaspoon ranch mixture, then sprinkle with shredded cheese.
  6. Add diced tomato and green onions on top. Bake 5–7 minutes until cheese melts and cups are golden.
  7. Remove from oven, garnish with fresh cilantro, and let cool 2–3 minutes before serving.

Notes

Assemble up to 4 hours in advance and refrigerate before baking. Freeze unbaked bites for up to 3 months. Reheat baked bites in a 300°F oven for 3–4 minutes to restore crispiness.
