- Measure 9 cups Rice Chex cereal into a large mixing bowl.
- In a microwave-safe bowl, melt white chocolate chips and caramel bits in 30-second intervals, stirring until smooth.
- Stir in vanilla extract and salt into the melted mixture.
- Pour melted mixture over cereal and gently stir to coat evenly.
- In a separate bowl, mix apple pie spice, powdered sugar, and granulated sugar.
- Sprinkle sugar mixture over coated cereal and toss gently until evenly coated.
- Fold in crushed dried apple chips.
- Spread onto parchment-lined baking sheets and let cool for 30 minutes.
- Store in an airtight container for up to 1 week.

For best results, don’t skip the cooling step – it helps the coating set. Dried apple chips are essential for crunch; avoid fresh apples which add too much moisture.
