Method
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Whisk flour, cocoa powder, baking powder, and salt in a medium bowl.
- In a large bowl, beat granulated sugar, brown sugar, and eggs until light and fluffy.
- Mix in vanilla extract.
- Gradually add dry ingredients and mix until just combined.
- Chill dough for 30 minutes.
- Mix cinnamon and sugar for coating in a small bowl.
- Roll dough into 1-inch balls and coat generously in cinnamon sugar.
- Place cookies 2 inches apart on baking sheet.
- Bake for 10–12 minutes until edges are set and tops are crinkled.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack.
Notes
Do not overbake. Cookies should remain soft in the center. Chilling the dough is essential for achieving the signature crinkle texture.
