  • cups granulated sugar 350g
  • ½ cup vegetable oil 120mL
  • 4 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour 240g
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • 1 cup powdered sugar 120g, for rolling

Method
 

  1. In a large bowl, mix cocoa powder, granulated sugar, and vegetable oil until a thick paste forms.
  2. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  3. Whisk flour, baking powder, and salt together in a separate bowl.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined. Chill dough for 4 hours.
  5. Preheat oven to 350°F and line baking sheets with parchment paper.
  6. Roll chilled dough into 1-inch balls and coat generously in powdered sugar.
  7. Place on baking sheets and bake 10–12 minutes until puffed and crackled.
  8. Cool on the tray for 5 minutes before transferring to a wire rack.
