Ingredients
  

For the Beef
  • 1 lb flank steak thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
For the Stir Fry
  • 2 tablespoons vegetable oil
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 1 bell pepper sliced
  • 1 tablespoon fresh ginger minced
  • 1/4 cup beef broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions chopped

Method
 

  1. Slice flank steak against the grain and combine with soy sauce and cornstarch. Marinate for 15 minutes.
  2. Heat 1 tablespoon oil in a skillet or wok over medium-high heat.
  3. Add beef in a single layer and stir-fry for 3–4 minutes until browned. Remove and set aside.
  4. Add remaining oil to the pan. Stir-fry onion, bell pepper, and garlic for 3–5 minutes until tender-crisp.
  5. Add ginger and cook for 1 minute until fragrant.
  6. Return beef to the pan, add beef broth and oyster sauce, and stir-fry for 2–3 minutes.
  7. Drizzle with sesame oil, season with salt and pepper, and garnish with green onions.
  8. Serve hot with rice or noodles.

Slice beef against the grain for tenderness and avoid overcrowding the pan to achieve proper searing.
