Ingredients
  

  • 454 g lean ground beef or ground turkey for a lighter version
  • 4 –6 medium Russet potatoes or Yukon Golds as an alternative
  • 28 g taco seasoning low-sodium or homemade
  • 120 ml water
  • 120 g sharp cheddar cheese shredded
  • 120 ml sour cream or Greek yogurt
  • 25 g green onions chopped
  • 85 g fresh tomatoes diced

Method
 

  1. Preheat the oven to 200°C (400°F). Wash and scrub the potatoes thoroughly, pierce each one several times with a fork, rub with olive oil, and sprinkle with salt.
  2. Place the potatoes directly on the oven rack and bake for 45–50 minutes until tender.
  3. While potatoes bake, heat a skillet over medium heat. Add ground beef and cook for 5–7 minutes until browned. Drain excess fat.
  4. Stir in taco seasoning and 120 ml water. Simmer for 5 minutes until thickened.
  5. Slice baked potatoes lengthwise and fluff the insides with a fork.
  6. Spoon the taco beef mixture over each potato.
  7. Top with shredded cheddar cheese, a dollop of sour cream, chopped green onions, and diced tomatoes.
  8. Serve immediately while hot and cheesy.

Notes

For extra crispiness, rub potatoes with olive oil before baking. For a healthier version, use ground turkey and Greek yogurt. Perfect for family dinners or taco nights!
