- Rinse and sort the dried 15 bean mix, removing any debris.
- Add beans to the crock pot and pour in water or vegetable broth.
- Stir in onion, garlic, and bay leaves.
- Add thyme, oregano, and smoked paprika; mix well.
- Pour in diced tomatoes with juices and stir to combine.
- Add optional ham, sausage, carrots, or celery if using.
- Cover and cook on low for 8–10 hours or high for 4–6 hours until beans are tender.
- In the last hour, stir in lemon juice, salt, pepper, and optional hot sauce.
- Remove bay leaves before serving.
- Ladle into bowls, garnish with parsley, and enjoy.
Notes
Add lemon juice at the end to brighten flavors. For creamier texture, mash some beans before serving.
