  • 2 large eggs Use room temperature eggs for smoother blending.
  • 50 g unsweetened cocoa powder Use Dutch-processed for less acidity; sift to avoid lumps.
  • 170 g pure honey Adds moisture and sweetness; swap with maple for a deeper flavor.
  • 5 ml vanilla extract Use real vanilla for the best aroma.
  • 2 tsp baking powder Ensures gentle lift.
  • 1 tsp salt Sharpens the chocolate flavor.
  • 40 g chocolate chips or chopped walnuts Adds texture.

Method
 

  1. Blend the cottage cheese until almost silky and there are no visible curds.
  2. Add eggs, cocoa powder, honey, vanilla extract, baking powder, and salt; blend until smooth.
  3. Preheat the oven to 350°F (175°C).
  4. Pour the batter into an 8×8-inch baking pan lined with parchment.
  5. Bake until the edges firm and pull slightly from the pan, about 20 minutes.
  6. Check doneness with a toothpick; it should come out with a few moist crumbs.
  7. Cool in the pan for about 10 minutes, then transfer to a cooling rack to cool completely.
  8. Slice with a sharp knife warmed under hot water for clean cuts.
