- Preheat oven to 350°F (175°C). Position the rack in the center. Grate cheeses for best melting results.
- Peel and slice potatoes into 1/8-inch (3mm) rounds using a mandoline for even cooking.
- In a saucepan, melt shortening over medium heat. Add minced garlic and sauté 30 seconds until fragrant. Stir in heavy cream, salt, and pepper; heat until just starting to boil. Remove from heat immediately.
- Grease a 9×13-inch baking dish. Layer half of the potatoes, pour over half the cream mixture, and sprinkle half of each cheese. Repeat layers, finishing with cheese on top.
- Cover tightly with foil and bake 40 minutes. Uncover and bake 25–35 minutes more, until golden and tender.
- Let rest 5–10 minutes before serving for clean, set slices.
Notes
Use freshly grated cheese for smooth melting and consistent texture. Maintain even potato thickness and allow the dish to rest before serving to avoid runny layers.
