Ingredients
  

  • 1 lb breakfast sausage at room temperature
  • 3 cups sharp cheddar cheese freshly shredded
  • 3 cups Bisquick mix
  • Optional: 8 oz cream cheese softened
  • Optional: 1/4 teaspoon red pepper flakes
  • Optional: 2 green onions finely chopped

Method
 

  1. Preheat oven to 375°F and line two baking sheets with parchment paper.
  2. Bring sausage to room temperature and shred cheddar cheese if using block cheese.
  3. In a large bowl, combine sausage, shredded cheddar, and Bisquick. Mix gently with hands until just combined.
  4. Use a cookie scoop or tablespoon to shape mixture into 1-inch balls and roll gently until smooth.
  5. Place sausage balls on prepared baking sheets, leaving space between each one. Bake for 15–20 minutes, rotating pans halfway through.
  6. Remove from oven once golden brown and firm. Internal temperature should reach 160°F. Cool for 5 minutes before serving.

Notes

Allow sausage to reach room temperature for easier mixing. Avoid overmixing to prevent tough sausage balls. Store baked sausage balls in the fridge for up to 4 days or freeze raw or cooked for longer storage.
