- In a medium bowl, beat the softened cream cheese until smooth and creamy.
- Add the peppermint extract to the cream cheese and mix until well combined.
- Gradually add the powdered sugar, one cup at a time, mixing thoroughly after each addition. Continue adding until a stiff, workable dough forms. You may not need all 5 cups of sugar.
- Roll the dough into small balls (about 1/2-inch to 1-inch in diameter), then flatten them slightly, or press into desired candy molds. You can also add a few drops of food coloring to the dough at this stage for festive colors.
- Place the formed mints on a parchment-lined baking sheet. Refrigerate for at least 12 hours, or until the mints are completely firm.
