Method
 

PREPARE THE DOUGH
  1. In a large mixing bowl, combine the rolled oats, protein powder, cocoa powder (if using), and salt. Stir well to ensure everything is evenly distributed.
  2. Add the almond butter, maple syrup, mint extract, and green food coloring (if using) to the dry ingredients.
  3. Mix everything together with a spatula or your hands until a thick, uniform dough forms. If the mixture is too dry and crumbly, add almond milk one tablespoon at a time until it reaches a consistency that can be rolled without falling apart.
  4. Fold in the mini chocolate chips until they are evenly distributed throughout the dough.
FORM THE BALLS
  1. Scoop out about 1 tablespoon of the mixture for each ball. Roll it between your palms to form a smooth, compact ball. Repeat with the remaining mixture.
  2. Place the finished Mint Chocolate Chip Protein Balls on a baking sheet lined with parchment paper.
CHILL AND SERVE
  1. Refrigerate the Mint Chocolate Chip Protein Balls for at least 30 minutes to allow them to firm up before serving. This improves their texture and holds them together better.
