Ingredients

  • 1 lb lean ground beef Choose a good quality lean ground beef (e.g., 80/20) for best flavor.
  • 8 oz pepperoni slices Use your favorite brand of pepperoni, or turkey pepperoni for a lighter option.
  • 8 oz cream cheese Ensure it's softened to mix smoothly with the beef and sauce.
  • 2 cups shredded mozzarella cheese Freshly shredded cheese often melts better than pre-shredded.
  • 1 cup low-sugar pizza sauce Check nutritional labels to ensure it fits your low-carb diet.
  • 1 cup diced bell peppers Any color works, adding a nice crunch and slight sweetness.
  • 1/4 cup sliced black olives Adds a savory, briny touch; optional but highly recommended for pizza flavor.
  • 1 tsp Italian seasoning Enhances the classic pizza flavor; adjust to your preference.
  • 1 cup chopped mushrooms or spinach Great for adding extra vegetables and nutrients to your casserole.

Equipment

  • 9x13 inch baking dish
  • Skillet

Method

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Brown ground beef in a skillet over medium heat. Drain well using a paper towel-lined colander to remove excess fat.
  3. Return beef to the skillet off heat and stir in softened cream cheese and pizza sauce until well combined and creamy.
  4. Spread the beef mixture evenly into the prepared baking dish.
  5. Top with diced bell peppers, then evenly sprinkle with shredded mozzarella, and finish with pepperoni slices and any optional toppings like olives, mushrooms, or spinach.
  6. Bake uncovered for 20–25 minutes until bubbly, heated through, and golden on top.
  7. Broil for 2 minutes if you prefer a crispier, more browned cheese topping.
  8. Let cool for 5 minutes before slicing and serving to allow the casserole to set.

Notes
