Ingredients

  • 240 g large firm, ripe bananas Ensure bananas are firm and ripe for easy slicing and best texture.
  • 2-3 tbsp natural creamy peanut butter Use unsweetened for a healthier option; adjust to taste.
  • 2 tbsp roasted unsalted peanuts Roughly chop for a satisfying crunch; unsalted prevents over-salting.
  • 40 g dark chocolate chips (70% cacao or higher) 70% cacao or higher provides a rich, less sweet chocolate flavor.
  • 1 tsp coconut oil Helps the chocolate melt smoothly and ensures a thin, crisp coating.
  • pinch g Sea salt flakes A small sprinkle enhances the sweet and savory profile.
  • 10 g mini pretzel pieces Optional; adds a delightful salty crunch.
  • 10 g shredded coconut Optional; for a tropical flavor and chewy texture.
  • 10 g chopped dates Optional; provides natural sweetness and a chewy bite.

Equipment

  • Parchment-lined baking sheet
  • Microwave-safe bowl

Method

  1. Peel the bananas and slice into thick coins, about 1/2 inch each (you should get 16-20 coins).
  2. Arrange banana slices on a parchment-lined baking sheet, making sure they do not touch.
  3. Freeze banana slices for 15-20 minutes, until firm but not rock hard.
  4. Remove from freezer and spread about 1/2 teaspoon peanut butter on each banana coin.
  5. Sprinkle each with chopped peanuts and a pinch of sea salt (if using). Add optional toppings if desired.
  6. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 15-second bursts, stirring each time, until melted and smooth (about 45 seconds total).
  7. Drizzle melted chocolate over each banana bite, or dip the tops for a thicker coating.
  8. Return tray to freezer for 30-60 minutes, until chocolate is set and bananas are frozen solid.
  9. Let sit at room temperature for 5 minutes before serving for best texture. Enjoy immediately and store leftovers in a freezer-safe container.

Notes

Let the bites sit at room temperature for 5 minutes before serving for optimal texture. Store any leftovers in an airtight, freezer-safe container to maintain freshness.
