  • 1/2 cup mayonnaise
  • 1/4 cup Thai sweet chili sauce
  • 1-2 tablespoons Sriracha
  • 1 tablespoon honey
  • 1 pound chicken tenderloins
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 cups panko breadcrumbs
  • 2 cups canola oil
  • 2 tablespoons chopped parsley

Method
 

  1. Whisk together mayonnaise, sweet chili sauce, Sriracha, and honey until smooth; refrigerate.
  2. Mix buttermilk, flour, cornstarch, egg, Sriracha, garlic powder, salt, pepper, and cayenne; add chicken and marinate 10 minutes.
  3. Coat each chicken piece in panko, pressing to adhere.
  4. Heat oil in a skillet to 365°F.
  5. Fry chicken in batches 2-3 minutes per side until golden and cooked through.
  6. Drain on paper towels, then toss warm chicken in Bang Bang sauce.
  7. Garnish with parsley and serve immediately.

Maintain oil at 365°F for perfect crispiness. Toss chicken in sauce while warm to ensure even coating and best texture.
