Method
- Preheat oven to 350°F and position rack in the center.
- Cut squash in half lengthwise using a sharp knife. Microwave for 2-3 minutes first if needed to soften.
- Scoop out seeds and stringy pulp with a spoon.
- Place squash halves cut-side down on a rimmed baking sheet and add 1/4 inch water to the pan.
- Bake for 35-40 minutes until flesh is tender.
- Flip halves cut-side up. Place 1 tablespoon butter and 1/2 tablespoon brown sugar in each cavity. Season with salt and pepper.
- Switch oven to broil and broil for 5 minutes until edges are golden-brown.
- Let rest for 3-5 minutes before serving.
Notes
Save the seeds for roasting as a healthy snack. For a lighter version, substitute butter with olive oil or ghee for added flavor. Broil carefully to avoid burning edges.
