Ingredients
  

  • 3/4 cup unsalted butter softened
  • 1 1/2 cups ground almonds or almond flour
  • 2 1/4 cups cake flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon vanilla extract
  • 1 large egg room temperature
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon lemon zest
  • 6 oz raspberry jam
  • Powdered sugar for dusting

Method
 

  1. Cream butter and sugar until light and fluffy.
  2. Beat in egg, vanilla extract, and lemon zest.
  3. Whisk cake flour, ground almonds, baking powder, and cinnamon.
  4. Add dry ingredients to wet mixture until just combined.
  5. Divide dough in half, flatten into discs, wrap, and chill for 1 hour.
  6. Roll dough to 1/8-inch thickness and cut heart shapes.
  7. Cut centers from half of the cookies.
  8. Bake at 350°F for 12 minutes until lightly golden.
  9. Cool completely before assembling.
  10. Spread jam on solid cookies, top with cutout cookies, dust with powdered sugar.

Notes

Chill dough thoroughly to prevent spreading and ensure clean heart cutouts. Assemble cookies only after fully cooled for best texture.
