Ingredients
  

  • 24 caramel squares Kraft, Werther’s, or homemade
  • 24 round vanilla wafer cookies Nilla Wafers or gluten-free alternative
  • 2 cups semi-sweet chocolate chips or milk, dark, or white chocolate

Method
 

  1. Preheat oven to 250°F. Line two baking sheets with parchment paper.
  2. Unwrap 24 caramels, place spaced on a sheet, and soften in oven for 5 minutes.
  3. Arrange vanilla wafer cookies bottom-side up on second sheet.
  4. Flatten softened caramels to cookie size and press onto cookies.
  5. Flash freeze assembled bites for 15 minutes.
  6. Melt 1 cup chocolate chips in microwave in 30-second intervals, stirring until smooth.
  7. Dip half the bites into melted chocolate using a fork, letting excess drip off. Place on parchment.
  8. Repeat with remaining bites and melted chocolate.
  9. Let coated bites set at room temperature for 15–20 minutes until firm.

Notes

Flash freezing is key to clean chocolate coating. Avoid refrigerating during setting to prevent chocolate bloom.
