Method
- Preheat oven to 425°F and place baking sheet inside to heat.
- Cut sweet potatoes into evenly sized fries.
- Soak fries in cold water for 30 minutes.
- Drain and pat completely dry.
- Toss fries with cornstarch until coated.
- Add olive oil and seasonings and toss again.
- Arrange fries in a single layer on hot baking sheet.
- Bake for 15 minutes, then flip fries.
- Bake an additional 10–15 minutes until crispy.
- Rest fries for 2–3 minutes before serving.
Notes
Do not overcrowd the baking sheet. Proper soaking and thorough drying are essential for crispy sweet potato fries.
