Ingredients
  

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method
 

  1. Preheat oven to 425°F and place baking sheet inside to heat.
  2. Cut sweet potatoes into evenly sized fries.
  3. Soak fries in cold water for 30 minutes.
  4. Drain and pat completely dry.
  5. Toss fries with cornstarch until coated.
  6. Add olive oil and seasonings and toss again.
  7. Arrange fries in a single layer on hot baking sheet.
  8. Bake for 15 minutes, then flip fries.
  9. Bake an additional 10–15 minutes until crispy.
  10. Rest fries for 2–3 minutes before serving.

Notes

Do not overcrowd the baking sheet. Proper soaking and thorough drying are essential for crispy sweet potato fries.
