Ingredients
  

For the Chicken
  • 1 lb boneless skinless chicken breasts or thighs
  • ¼ cup cornstarch
  • 1 egg white
  • ½ tsp salt
  • ½ tsp black pepper
For Frying
  • Vegetable oil for frying
  • 1 tbsp sesame oil
For the Dragon Sauce
  • 2 tbsp garlic minced
  • 1 tbsp ginger minced
  • 2 –3 dried red chilies or red chili flakes
  • ½ cup tomato ketchup
  • 2 tbsp soy sauce
  • 1 tbsp chili garlic sauce
  • 1 tbsp vinegar
  • 1 tbsp sugar or honey
  • ¼ cup water
Garnish
  • Sliced green onions
  • Toasted sesame seeds

Method
 

  1. Mix chicken with egg white, cornstarch, salt, and black pepper and marinate 10–15 minutes.
  2. Heat oil to 350–375°F and fry chicken in batches until golden and crispy.
  3. Drain fried chicken on paper towels.
  4. Heat sesame oil in a skillet and sauté garlic, ginger, and dried chilies until fragrant.
  5. Add ketchup, soy sauce, chili garlic sauce, vinegar, sugar, and water and simmer 2–3 minutes.
  6. Add fried chicken to the sauce and toss until evenly coated.
  7. Garnish with green onions and sesame seeds and serve immediately.

Notes

Serve immediately for maximum crispiness. Avoid overcrowding the pan while frying and keep oil temperature consistent.
