Method
- Preheat oven to 350°F.
- In a large bowl, whisk self-rising flour, granulated sugar, and ¼ cup brown sugar.
- Add melted butter, milk, and vanilla extract and whisk until smooth.
- Pour batter into an ungreased 9×13 baking dish.
- Layer sliced bananas evenly over the batter without stirring.
- Mix remaining brown sugar with cinnamon and nutmeg.
- Sprinkle mixture evenly over bananas.
- Bake for 45–50 minutes until golden and crackly on top.
- Cool for 15 minutes before serving.
Notes
Do not stir bananas into the batter. Use very ripe bananas for best flavor. Do not grease the pan for proper caramelization. Serve warm for best texture and taste.
