Ingredients
  

  • tablespoons active dry yeast
  • cups milk warmed to 100–110°F
  • 1 tablespoon granulated sugar
  • cup honey
  • ¼ cup unsalted butter melted
  • 2 cups old-fashioned oatmeal
  • 2 teaspoons kosher salt
  • 1 cup whole wheat flour
  • –5 cups all-purpose flour
  • 1 egg mixed with a splash of water for egg wash
  • Extra oatmeal for topping

Method
 

  1. Combine yeast, sugar, and warm milk and let sit until foamy.
  2. Stir in oatmeal and let soak for 10–15 minutes.
  3. Add melted butter and honey and mix well.
  4. Mix in salt, whole wheat flour, and half the all-purpose flour.
  5. Add remaining flour gradually until dough is slightly sticky.
  6. Knead dough until smooth and elastic.
  7. Place dough in greased bowl, cover, and let rise until doubled.
  8. Divide dough, shape into loaves, and place in greased pans.
  9. Let rise again until slightly above pan edges.
  10. Brush with egg wash and sprinkle with oats.
  11. Bake at 350°F for 40 minutes until golden.
  12. Cool completely before slicing.

Notes

Use warm—not hot—milk to avoid killing the yeast, add flour gradually to prevent dense bread, and allow the loaf to cool fully before slicing for best texture.
