Homemade Irish Potato Candy Recipe

These Irish potato candies are creamy, coconut-peanut butter no-bake treats rolled in cocoa powder that look like potatoes but taste incredible.

Ingredients
  

  • 1/4 cup unsalted butter softened
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 cup sweetened shredded coconut
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsweetened cocoa powder

Method
 

  1. In a large bowl, beat butter, peanut butter, and vanilla until creamy.
  2. Add powdered sugar gradually until a soft dough forms.
  3. Fold in shredded coconut and cinnamon.
  4. Scoop about 1 tablespoon and shape into potato-like ovals.
  5. Roll each piece in cocoa powder until coated.
  6. Place on parchment-lined tray.
  7. Refrigerate for 30 minutes until firm.
  8. Serve and enjoy.

Notes

Use creamy peanut butter for best texture. Chill dough if too soft. Store in fridge for best consistency and flavor.
