Method
- Prepare lollipop molds or line a baking sheet with parchment paper and set aside lollipop sticks.
- In a medium saucepan, combine the honey, fresh lemon juice, and lemon zest.
- Heat the mixture over medium heat, stirring gently until well combined.
- Continue heating until the mixture reaches 300°F (hard crack stage).
- Remove from heat immediately to prevent burning.
- Carefully pour the hot mixture into lollipop molds or spoon onto parchment paper.
- Insert lollipop sticks and gently twist to secure.
- Let cool at room temperature for about 60 minutes until fully hardened.
- Remove from molds and wrap individually if desired.
Notes
Use a candy thermometer for best results. Avoid overheating to prevent bitterness.
