Ingredients
  

  • 1 cup honey
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest

Method
 

  1. Prepare lollipop molds or line a baking sheet with parchment paper and set aside lollipop sticks.
  2. In a medium saucepan, combine the honey, fresh lemon juice, and lemon zest.
  3. Heat the mixture over medium heat, stirring gently until well combined.
  4. Continue heating until the mixture reaches 300°F (hard crack stage).
  5. Remove from heat immediately to prevent burning.
  6. Carefully pour the hot mixture into lollipop molds or spoon onto parchment paper.
  7. Insert lollipop sticks and gently twist to secure.
  8. Let cool at room temperature for about 60 minutes until fully hardened.
  9. Remove from molds and wrap individually if desired.

Notes

Use a candy thermometer for best results. Avoid overheating to prevent bitterness.
