Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2 large eggs
  • 3 ripe bananas mashed
  • 1 cup plain or vanilla Greek yogurt
  • 1/3 cup maple syrup
  • 1/4 cup brown sugar
  • 1/2 cup chocolate chips or chopped nuts optional

Method
 

  1. Preheat oven to 350°F (176°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, beat eggs and mix in mashed bananas, Greek yogurt, maple syrup, and brown sugar.
  4. Add wet ingredients to dry ingredients and gently fold until just combined.
  5. Fold in chocolate chips or nuts if using.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 40–45 minutes, until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to keep the bread tender. Use very ripe bananas for the best flavor and moisture.
