Method
- In a medium bowl whisk together flour, baking soda, and salt.
- In a large bowl beat softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Add vanilla extract and mix until combined.
- Add dry ingredients to the wet mixture and mix on low speed until just combined.
- Fold in rainbow sprinkles and white chocolate chips.
- Cover dough and chill in the refrigerator for at least 30 minutes.
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Scoop dough into 2-tablespoon balls and place on baking sheet 2 inches apart.
- Bake for 10–12 minutes until edges are set and centers are slightly soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Chilling the dough helps create thicker, chewier cookies. Use rainbow jimmies instead of nonpareils to prevent the colors from bleeding into the dough.
