Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup shredded cheese
  • 1/2 cup chopped pitted olives
  • 1/3 cup olive oil
  • 1 cup milk
  • 1 teaspoon dried oregano or basil optional

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Fold in the shredded cheese and chopped olives.
  4. In another bowl, whisk together the olive oil and milk.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Bake for 45–50 minutes until golden and a toothpick comes out clean.
  8. Cool for 10 minutes, slice, and serve.

Notes

Do not overmix the batter to keep the bread light and tender.
