Method
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together the flour, baking powder, and salt.
- Fold in the shredded cheese and chopped olives.
- In another bowl, whisk together the olive oil and milk.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for 45–50 minutes until golden and a toothpick comes out clean.
- Cool for 10 minutes, slice, and serve.
Notes
Do not overmix the batter to keep the bread light and tender.
