- In your blender or food processor, combine Greek yogurt and cottage cheese until smooth and creamy, about 30-45 seconds.
- Add the unsweetened cocoa powder, honey (or maple syrup), and vanilla extract. Blend for another 15 seconds until fully mixed.
- Transfer the base to a bowl. Gently fold in the dark chocolate chips and mini marshmallows, keeping marshmallows whole.
- Spoon the mixture into your serving bowl. Top generously with crumbled graham crackers.
- Use a kitchen torch or broiler to lightly toast the marshmallows on top, watching carefully to avoid burning.
- Serve fresh or chill for 15 minutes to firm up slightly.
