- Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper to prevent sticking.
- In a bowl, whisk together the eggs, melted coconut oil, and your sweetener until smooth.
- Stir in the whey protein powder and cocoa powder. Mix until just combined—don’t overmix or bites can get dense.
- Pour batter into the prepared pan. Spread evenly and smooth the top with a spatula.
- Bake for 15-18 minutes. Start checking at 15 minutes. The bites should be set but fudgy inside. A toothpick should come out with moist crumbs.
- Let the brownies cool in the pan for at least 20 minutes before slicing into bite-sized squares.
Notes
These brownie bites are best enjoyed fresh but can be stored in an airtight container for up to a week. Feel free to add nuts or chocolate chips for extra flavor!
