Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas until creamy.
  3. Stir in the melted coconut oil, honey (or maple syrup), eggs, and vanilla extract until well combined.
  4. Add the baking soda and salt, mixing well to incorporate.
  5. Gently fold in the whole wheat flour and protein powder until just combined, being careful not to over-mix.
  6. Pour the batter into the greased loaf pan.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once done, allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

This recipe is incredibly versatile. Feel free to add nuts, chocolate chips, or dried fruit for extra flavor and texture. For an even healthier twist, you can reduce the amount of honey or maple syrup.
